I'm trying to figure out the backspacing/offset I would need to get 37x12.50x17 tires on my 2016 Jeep Wrangler. I have a 1" leveling kit on it now and may even go to a 2" leveling kit, but I don't know what backspacing/offset I would need on new wheels, I want to keep as much tire as I can under the fender as possible so my tires don't stand way out

Welcome @gtaylor1 in general for jeeps focus on backspacing. For 37s, aftermarket wheels with backspacing between 3.5 to 4.5 should work.

Welcome to the forum @gtaylor1 . I believe most 37 inch tires have a 12.50 width. As with 35s. I'm running a 2 inch wider than stock fender flare, with 1 1/2 spacers with a 4.75 backspace wheel. And my tires barely hang out past the flares. As @aggrex mentioned. You should be fine with 3.5 to 4.5 back spaced wheels.

Enjoy the forum. Bunch a good people here.

For 37s I believe you can have no more than 4.5 in back space or the tire will rub the control arm in full turn.

My 37/13.5/17 rubbed frame, control arm and sway with 4.5" BS, I'd recommend 3.5" to 3.75" for a 37".
The other Jeep has 37/12.5/17 and does not rub with 3.75".
