I replaced the dimmer/cruise/wiper lever and they came on but when I shut them off they won't come back on. Its my project but has become my daily driver as my other vehicle just decided to crap out lol.

I would look at the switch next. It could be melted or melting as all of the power that goes to the headlights goes through the switch. It would be advisable to get a relay kit that pulls the power for the headlights directly from the battery and not through the switch.
K-suspension is a popular option in many of the Cherokee FB groups but it appears he is a bit backordered on that.
You can also get a relay harness from LMC truck: Single headlight - https://www.lmctruck.com/1973-87-chevy-gmc/wiring-components/gm-heavy-duty-headlight-harness
