Some possibilities: new thermostat and installed correctly? 50:50 coolant? air in the system? fan shroud installed? fan engaging at correct temps?

IIRC this is a viscous fan drive and NOT an electric fan - YES on I'm wrong?
could there be a loss of coolant? gasket, correct radiator cap, hose?
did you check viscous fan drive?

you did use a good quality thermostat at correct rating ? never use a lower rated T'stat.
    As mentioned - installed correctly?

TIP: when installing a thermostat, place an aspirin (you- use your viagra) :) to hold valve open this will greatly help purge the system of air....
